On this week’s episode of All in the Industry, host Shari Bayer is joined in the studio by Jeff Ruiz, Tea Curator for Atera, a two star Michelin restaurant in Tribeca. Atera offers a tea pairing that’s specific to the course, matching six types of tea with the restaurant’s 16- to 18-course tasting menu. The tea pairing program started”on a hunch” in 2013, about a year after the restaurant first opened its doors. Since then, Ruiz has been given full autonomy to explore new potential pairings.

As the Service Director of Maialino, I was responsible for training an ever-changing staff of 50 for a restaurant that is open for three meal periods every day of the year. While struggling to keep up-to-date information in the minds and mouths of my staff, I realized something: the restaurant industry has no standard for training our staff.
