Markus Glocker, Koloman

Markus is celebrated for his elegant and precise attention to detail. His passion and high standards have earned him many accolades, including a coveted Michelin Star, three stars from The New York Times and from New York Magazine, and in May 2015, as Executive Chef/Owner of Batard Restaurant in NYC, he was awarded Best New Restaurant in America by the James Beard Foundation. Roni Mazumdar and Chintan Pandya, Unapologetic Foods

A Tribute to Gael Greene (Rebroadcast)
On today's episode of All in the Industry®, our host Shari Bayer has a special episode in honor of the late, legendary Gael Greene, who passed away this past Tuesday at her home in Manhattan. She was 88 years old and the cause was cancer. As a tribute to Gael, we're rebroadcasting our Episode 150 with Gael, aka Insatiable Critic, which originally aired on August 2, 2017. Shari was incredibly honored to have Gael on her show as she was truly an icon in the hospitality industry. Gael, who was the original restaurant critic of New York Magazine for four decades beginning in 1968, the year of the magazine’s inception, reinvented the art of the restaurant review with sass and sensuality. She was famous for many things, including her taste, her elaborate hat collection and her intimacies, as well as her incredible work in the restaurant community serving, up until her passing, as chairwoman of Citymeals on Wheels, a New York charity she helped create in the early 1980s to provide food for the elderly. We are very saddened by this news, and send our sincerest condolences to Gael’s family, friends and community. Shari feels fortunate and grateful that she had the opportunity to know Gael a bit through her work as a culinary and hospitality publicist with her restaurant clients, as well as a podcaster. It was a true privilege having Gael on our show, and Shari is so thankful that she took the time to share her story, or stories, with us. Rest in peace, Gael Greene, forever the Insatiable Critic. Amy Emberling, Zingerman's Bakehouse
On today's episode of All in the Industry®, Shari Bayer's guest is Amy Emberling, one of the original bakers and current partners at the legendary Zingerman's Bakehouse in Ann Arbor, MI, which opened in 1992 as a complimentary business to Zingerman’s Delicatessen, an Ann Arbor institution founded in 1982, championing local farmers and food purveyors for more than 40 years. Amy has been an avid food lover and baker since her childhood in Nova Scotia, Canada. After high school, she moved to Cambridge, MA, and received her bachelor’s degree from Harvard University. She then followed her passion for food and learned to cook and bake at L’ecole de Gastronomie Française at the Ritz Hotel in Paris, France as well as in Michigan restaurants. In 1999, she received her MBA from Columbia University. Amy has been working in the food world for over 30 years. In 2000, she became a Partner at Zingerman's Bakehouse, where she continues to be involved in hands-on baking and teaching classes, in addition to managing the overall business. Meg Bickford, Commander's Palace
On today's episode of All in the Industry®, Shari Bayer's guest is Meg Bickford, Executive Chef at Commander’s Palace, a New Orleans landmark since 1893, known for creating great dining memories. Megan “Meg” Bickford has called the Commander’s Palace kitchen her culinary home since June 2008 and took on the role of Executive Chef at the New Orleans destination for leading edge Haute Creole cuisine in October 2020. Meg previously served as the Executive Chef of Cafe Adelaide, the Commander’s family’s playful, modern Creole restaurant. She comes from a family with a father from New Orleans and a mother from “down the Bayou” in Larose, so both Cajun and Creole influences run in her blood. As Commander’s Palace is the kitchen where Cajun and Creole crashed for the first time in the 1970's with Paul Prudhomme and Ella Brennan, Meg and her Creole and Cajun influences are in the perfect position at the helm of the kitchen. Commander's Palace, the winner of seven James Beard Foundation Awards, has evolved into a culinary legend.
