Harold Moore, Charlie Palmer Collective
On today's episode of All in the Industry®, Shari Bayer is back at our studio in Brooklyn with her guest is Harold Moore, Chief Culinary Officer for Charlie Palmer Collective. Harold, who began his cooking career at several restaurants in his home state of New Jersey, graduated from the Culinary Institute of America, and then he worked in several acclaimed NYC restaurants, including Daniel, Jean-Georges and March. He made his mark as executive chef at the famed three-star French restaurant Montrachet in Tribeca, where he was nominated by the James Beard Foundation for its Rising Star Chef of the Year award, among other accolades. Harold opened his first NYC restaurant, Commerce, in the West Village in 2008, followed by Harold’s at the Arlo Soho and Bistro Pierre Lapin. As a side charity project, Harold has been making coconut cakes with all proceeds going to Make-A-Wish Metro New York. Carolina Bazan, Ambrosia and Ambrosia Bistro
On today's episode of All in the Industry®, Shari Bayer has a special episode from her recent trip to Santiago, Chile, with Carolina Bazán, chef-owner of Ambrosia and Ambrosia Bistro in Santiago. Carolina opened Ambrosia with her family in 2003. With the help of her partner, sommelier Rosario Onetto, she began the Hidden Kitchen movement in 2012, focusing on market produce and seasonal ingredients, which led to Ambrosia’s new location and concept; a modern family bistro, outside of the classic gastronomic circuit, where fresh market products leads a seasonal menu that changes daily. In 2017, Carolina and Rosario opened their own restaurant, Ambrosia Bistro, located downtown with a very hip vibe and simple, seasonal menu. Carolina was named Best Female Chef by Latin America’s 50 Best Restaurants 2019, and Ambrosia Bistro is currently #72 on The Worlds 50 Best Restaurants.
