Navigating Dry January for Your Brewery
NA craft beer has become an important sector of the craft beverage industry, but with some brewery hesitation. We will discuss why Dry January can actually benefit your brewery, and how you can appeal to those observing as well as those who may chose NA options year round. We will have a few of our industry friends with us discussing how you can plan for what is traditionally seen as a slower time in the market, how your taproom, sales channels, and events can all benefit from Dry January through NA offerings.
Our technology started on a laboratory benchtop when Ben Jordan, CEO, began a quest to prove that non-alcoholic (NA) beer can provide the same pleasurable drinking experience found in craft breweries. ABV Technology was formed and the team began researching the NA market and soon found that demand for great tasting NA beer far outweighed supply. A visit to the Craft Brewer's Conference in April 2017 uncovered a lack of equipment focused on the craft brewing industry. At that point, the decision was made to move forward and bring to market a technological solution worthy of the craft industry. Years of research, testing, drinking and more have led us to being pioneers in the craft NA market, and we look forward to sharing everything we've learned with you!

How to Make Ownership Your Competitive Advantage w/Larry Chase (Ray Johnson Group)
You’re an owner and your brewery business is always top of mind. Ask yourself: What would my business be like if my employees had an ownership mindset? What if they thought about the business like me? If they did, there’s a high likelihood the business would perform better and be more profitable. You’d have lower turnover and longer-term employees. They’d even be more involved. So, do you have to give employees actual ownership of the brewery to get an ownership mindset? You or other investors are not ready to give up your ownership – can you still create an ownership culture? What will help employees truly think like owners?
To help you understand the basics of an ownership culture we’ll discuss the 14 Rules of Ownership and what they mean for you and your employees. Plus, you’ll learn the 3 transformational components to building an ownership culture: thinking like an owner through education, acting like an owner through enhanced involvement, and feeling like an owner through a stake in the outcome. With an ownership culture your brewery business will experience increased trust, higher involvement, and consistent performance and profit. In essence it becomes a competitive advantage. Come learn the answers to the above questions and learn if you want to add an element of ownership to your culture.

"This is Native." - Collaboration & the Art of Storytelling
Skydance Brewing Co opened their downtown Oklahoma City brewery and taproom in fall 2021 with a lot of local buzz as a Native-owned craft brewery, but owner Jake Keyes felt his full story was not yet being told in their brand and sought to elevate the packaging of their core beers for stronger shelf appeal as they grew distribution.
Join us for a conversation with Jake and Brian Winkeler, founder of branding agency Robot House as they discuss the process behind their collaboration to build the “This is Native.” campaign and ensure Jake’s vision for Native empowerment fully resonates in the Skydance brand story.

Quality Control Triage
There are only 2 types of breweries:
1) Those who have had quality issues
2) Those who have had quality issues but didn't know it
We all try to prevent quality issues, however, it happens to us all.
What is commonly overlooked, what do I do when I have a quality problem? How do I control the damage? What should I do with the beer? What do I do next?
Escarpment cofounder Nate Ferguson has been working in the beer industry for nearly a decade, mainly focusing on microbiological Quality Control and Quality Assurance which is what he teaches at Niagara College for the Brewmaster Program. Nate is our creative and technical wizard and always finds ways to solve challenging technical problems in-house and for clients.

Craft Beer Consumers: Who Goes Where
After a year's worth of analyzing customer reviews, CBAS has bucketed six distinct craft beer consumer personas. This presentation will dive into what matters to each persona - ranging from things like service speed to parking availability. After a deep dive on the different types of consumers, we'll explore the audience at different types of taprooms. We know the experiences at a nanobrewery will be different than a regional, but this presentation will help breweries understand who is going where. Above all, we'll learn about what motivates return visits no matter what type of taproom you operate!

Developing Your Own Sense Of Beer Style w/Jeremy Storton (Good Beer Matters) & Julia Herz (American Homebrewers Association)
Beer styles are a bit polarizing. They are sometimes viewed as rules brewers ought to follow or information reserved for the elite. In this presentation, Jeremy and Julia will share that styles are meant to serve, not separate, and that everyone should develop their own sense of beer style.
Once upon a time Jeremy Storton didn’t know the difference between an ESB and an IPA. Now he’s an Advanced Cicerone®, IBD certified brewer, BJCP judge, beer educator, freelance mixed-media content producer, and an award-winning beer writer and host of the Good Beer Matters Podcast. He recently moved back to the Northwest to thoroughly research post outdoor activity beer pairings.
Julia Herz is executive director of the American Homebrewers Association® (AHA)—the nation’s largest hobbyist not for profit organization for homebrewers and fermented beverages.

Guest Experience: How to Thrive in an Instant, On-Demand World
There’s a huge difference between good service and a good guest experience. It’s challenging enough to ensure your guests are greeted in a timely manner, their orders taken quickly, drinks never run dry, and their bill received and closed on time. These service steps are absolutely critical, but do very little to combat a negative first impression. Standards for service are increasing at a rapid pace as patience of our guests wanes, so is it time to pivot our focus away from basic tasks and focus more heavily on our presence with guests? In this session we will cover:
QR Code Ordering - Pros & Cons for the Brewery
Credit Card PCI Compliance (Chip vs Swipe)
"Keeping the Human Touch" using technology for a better guest experience
Kitchen & Pop-Up Order Efficiency through KDS
SMS Texting in Guest Ordering
Comprehensive Guest-Facing Beer Menus
Using Order Variants to Reduce Beer Excise Tax
This conversation features: Brent Hernandez (Redlight Redlight Craft Beer Bar), Doug Cleary (GoTab), Patricia Mejia (GoTab), Rick Malthaner (GoTab)
