Ramen Is About Kind of Mami, Right?
In Japan, mami often is through these aqueous products like Dashi. It also through these kind of soy fermentation projects like miso and soy sauce in Italy. But it's also through certain ingredients like mushrooms and tomatoes which are very common in the cuisine as well. And that's also a misnomer because without getting too much into Italian cuisine, I am half Italian so it kind of comes up. The most elegant cooking in Japan often is highly prising the ingredient in terms of its own natural umami. There's lots of ways that people approach the dish but the two are similar and yet divided in terms of how they approach umami.
