The quality of the avengers, both shefs and and craftsmen, has sky rocketed a so back when i first started doing this in new york in the nineties. That's why it was like an apprenticeship. You learned, almost like crafts person learns their trade. And you start to understand what the internal rules are of that business. Any really unique experiences stand out, anything that was, well, didn't expect that to happen.
