Sustainablity is also about resurrecting flavor. And the most pleasurable thing and the most delicious so that they're, they're all run along parallel lines. I mean, it's just one of those things that's so axiomatic. Even even the greatest chefs couldn't do that. That you can't have a unethically raised lamb, uh, an un thoughtfully raised carrot, and have a delicious lam and carrot tish? It's impossible. So there's something so liberating and wonderful about how you talk about becoming more ethical with our food.
