I just fell in love with it and I had a lot of time sort of in my own head with the dishes presented each night to enjoy them. And there were so many unfamiliar and interesting ingredients, you know, things that I really hadn't tasted before like birdock rude or Buddhist food or a bitter bell. So what did you learn from your mother? Her attitude and passion for Japanese food or the food in general sounds like a sheet of Fabio technical skills.
