The most challenging part of making ramen in Japan is the noodles. The dough doesn't have a lot of water, so it doesn't stick together very easily. You need some specialized equipment often to make it like a pasta machine or something to roll out the dough because doing it by hand is almost impossible. Most folks are just buying the noodles. It's not too difficult to get them to work as long as you understand what they're going towards.
