Millets, the ancient grain family of jowar, bajra and ragi, are making a comeback into India’s foodscape. Millets aren’t new to India’s culture or kitchens. They are full of nutrients and easy to produce. But in a country obsessed with rice, wheat and pulses, they aren’t widely produced or consumed.
