What does it mean that only 1% of nutrition data is tracked on food labels. Does it mean we should wait until the science is completely clear? Or, is there a lot of space on which food companies, large and small, can already act and secure a leading role in a space that seems completely open at the moment.The promise of molecular food mapping and its potential to illuminate the nutritional dark matter of our daily intake is also on our radar. The future is at our fingertips, with wearable technology and mass spectrometers in play to help us grasp our food's nutritional content better. A conversation with Olivier Husson, engineer, system agronomist and agroecologist, working on a health approach based around the balance of Eh (electrons) and pH (protons) in soil, plants, microorganisms, animals, etc. Unbalanced Eh-pH conditions lead to poor nutrition and poor photosynthesis. As consequence, plants which lack energy and are being oxidised are attacked by pests and pathogens.Everything starts with plants and optimal photosynthesis, but most plants are too sick to optimally turn sunlight into energy. So, they are not able to create or regenerate soils. This is a fascinating deep dive into healthy plants and non-healthy plants. A conversation with Tim Coates, co-founder of Oxbury Bank, the UK’s only specialist agricultural bank, about flood risk mitigation, water quality, water cycle restoration, selling flood mitigation to institutional investors and much more.Tim Coast, a third-generation farmer founded an agriculture focussed bank. He argues that the best place to start (at least in the UK) water cycle restoration might be selling flood mitigation to institutional investors and other institutional players suffering from bad watershed management like the drinking water companies trying to make sure we have clean drinking water, insurance companies who pay when businesses and houses flood, the reinsurance companies that pick up the final bill, the towns which get regular flooding, the railways, etc. It doesn’t make sense to sell the cooling effect of healthy water cycles and ecosystems to people who are not on board yet. 246 - Erwin Westers - Supermarkets didn’t care about his quality so he focussed on selling seeds to other regenerative farmers
A conversation with Erwin Westers, regenerative farmer, about soil biology, the German regenerative movement, the seed business, healthy seeds, healthy soils, healthy people, epigenetics, taste, flavour and why there is so much to learn in the German-speaking world on regeneration.It is all about soil biology. Erwin found it out after farming low till and with cover crops for over 5 years, not without results, but not with the impact he hoped it would have. Until it clicked: with help of the German regenerative movement they started to focus on soil biology because if that isn’t there the cover crops are not digested on time to provide the fertilisation for your cash crop.
