L’excellence consiste à donner de soi le meilleur, elle est la passion de l’action juste. Elle ne vient que par amour de ce que l’on fait.

Un des domaines où l’excellence se voit le mieux pour moi, c’est la cuisine. Dans ce Dialogue, je reçois Jérôme Banctel, le chef du restaurant trois étoiles Le Gabriel. C’est, selon moi, l’un des plus grands chefs français !
