Taiwan is on the world's culinary map for its night markets and street food. It's not as known for fine dining, but Taipei's Tairroir could change that. The Michelin Guide describes the restaurant's name as a play on "Taiwan" and "terroir", and its cuisine, a "love letter" to Chef Kai Ho's home island.
