The United States has made enormous strides in the past 20, 30, 50 years to create enough calories to feed the population. What we have left behind at a lot ef levels is nutrient density. We need to bring back some of the genetic diversity that may be bred away from over the last decades and re introduce the nutrition profile so our food system can embrace healthier options.
