Introduction
Chef Andrew Groolfield says there's not too many of these coal fire ovens in New York City. He calls it a "game changer" that will knock out most small independent artisanal pizza shops. As somebody who actually owns a pizza shop in California, I understand the perils and the tribulations of trying to create a good pizza off of essentially a glorified microwave.
