I think ultimately the whole conversation comes down to how we value food in Ireland. Food is valued as a commodity, and food as a cultural experience is viewed less. And I think what will happen is you will become more like the UK or America where you will have Starbucks, Caffe Niro,. Like the bigger places across the coffee in every single town because you can't open a small business. If we continue that, then we lose our own kind of food culture and we need to keep fighting for it. As one EY chef says: "Ireland's first purpose is working with farmers"
