How Long Does It Take to Distil a Batch of Gin?

We start off with a maceration, meaning we fill up the still with alcohol. Then we add the first botanicals in the still: juniper and coriander seeds. The most of our gins is meadow sweets, cassia bark, black pepper, vanilla,. lingan berries and fresh lemon peel - all organic. Yet again, fire up the still, and now the still runs for around five hours. So that gives us about 24 hours from start to end for a batch. And then we let it sit tanks. Technically it is done, but letting it sit on steel tanks helps settle all the flavors and aromas. Very little change in inther bottle
