Aria: I was fascinated by this idea that we could make a form of animal protein that would have the same nutritional components as red meat. Justin: We took our first step, had our first meetings and kind of rented our first lab bench here in San Francisco and got started. Aria: People are gravitating towards seafood away from red meat largely because of the nutritional benefits of eating seafood. So, mercury and microplastics, antibiotics, overfishing, climate change, is really what gets us out of bed.
