The consumer is a very narrow window in time, so what you can show them to actually help to make a conscious decision. You also have sustainability experts like agricultural scientists, people who are in food sharing organizations and then also working in a company where they were providing food labels. I had the chance to talk to the head of sustainability from different grocery chains and this opened up my eyes as well... it showed me what kind of challenges there were.
