The Different Types of Soy Sauce in Japan

Takashi Sato is the eighth-generation family member of Sanjiroi Sijoso in Mia Perfecture. He's also the president of Sanjay International in Virginia, which produces tamari-style soy sauce. In Japan, there are five types of soy sauce: Kikuma mix, Usukuchi type, and tamari-type,. The more soybean, the stronger the mami and darker the color; the more wheat, the more sharp and lighter in color.
