A 1% increase in organic matter, or humus, means that our soil can now hold 170,000 liters of water per hectare. Humus is a sweet-smelling chocolate-colored substance produced by microorganisms. It's the only thing that holds all minerals but it's also the vehicle for storing those minerals and delivery. The higher the humus levels, the greater the nutrient density of the food that you're consuming. And it reduces chemical contamination of our food.
