There is a particular variant of the ADH encoding gene that is very prominent among East Asians. People with this variant are able to metabolize ethanol much faster than everyone else, like a hundred times faster. Once your society starts growing vast quantities of carbohydrates to feed itself, it's only a matter of time until some of those carbs ferment.
