The Benefits of Shiso in Yakumi

The red shiso is rich in polyphenols that are antioxidants and anti-inflammatories. It's particularly used in the summer on rice dishes to help retard spoilage. Shiso leaves can be pulverized into something called yukari, which is often used as both a seasoning and a yakumi. And my favorite part because people know what you don't touch it, I wrap shredded daikon with shiso.
