Catering was a traditional path for african american women in food, from street vending to catering. Lena richard's edible artistry made her a star among the white new orleans elite. She could make anything from sculptural show stoppers to jumbalia and red beans and riceto dainty tea sandwiches. Richard ate her meals a separate dining room from her white classmates. The eight week course gave lena something more valuable than cooking instruction. It gave her credibility as a trained professional a rare thing for a woman of color at that time.
