The Importance of Accountability in Restaurant Culture
A number of reasons why you wanted to set this story in a restaurant. I had read a feature in an Irish broadsheet a couple of years ago the details some dreadful working conditions in various restaurants across the country. It got me thinking about industries like hospitality how easy it is for shady things to happen when those proper procedures aren't in place and as a writer that lack of accountability is interesting. You glean things too you learn things by osmosis a lot of the time things that don't look right or or seem right. The novel is set in a particular time in Dublin really Celtic Tiger but there are aspects of restaurant culture so down to the last spoon shall we say?
