The Importance of Models in Cookbooks

The early cookbooks are really quite sparse on procedural instructions. They tell you the ingredients, they're extremely finicky about the ingredients. And what you see, and this is a kind of trace I think of those bodily practices, is that the cookbooks become ever more idiot proof. So it's important that the rule be set down in explicit form as a kind of guide rope, but it has to be supplemented by the model, the implicit form.
