What Age Did Peasant Boys and Girls Become Economic Laborers?

The usual passage is from being a child to being a servant. Around about the age of 12 to 14, around about that age, they are starting to work. They carry on right through their teens and sometimes into their early 20s. And then they graduate, if you like, to adulthood, and they can perhaps marry, get land, and set themselves up as peasant householders rather than servants.
