The Table Analogy to the Lord's Altar

There's scant evidence of pigs being sacrificed. In ancient Near Eastern cultures in Israel, okay, they didn't sacrifice pigs. So the Israelites were just more consistent here. We don't sacrifice pigs, so we're not going to eat pigs either. If the table analogy is the point, why not just say that? But of course, the text doesn't say that.
