The author looks at two major trajectories of wonder foods in the 20th century. On one hand, wonder foods are increasingly high end consumer products for mostly affluent, mostly healthy people and on the other hand they become tools of intervention in global health. The innovation here is not scientific so much as it is something quite different. And with that comes a change in the relationship between science and commerce and the realm of nutrition.
