On washed rine cheeses we actually find many organisms, many bacteria. We think it's probably from the sea salt that's being used in cheese making. Or it could be due to the fact that cheese itself is a very salty environment. Do you ever get tired of talking about cheese? And no, i feel like i have the best job in the world. I get to study cheese in my love it's wonderful.
