Keeping Foods at Sub Zero Temperatures

Food is kept at a higher pressure than just sticking it in a freezer. The confinement of the system prevents the ice from freezing the food. Just a little bit of ice grows at the sort of periphery of the container, and it drives this hydrostetic pressure that stabilizes the whole system.
