In a version of the Coca-Cola mentos experiment, ice has lots of corners and rough edges. That does is provide nucleation sites for the dissolved carbon dioxide to come out of solution. Whereas in a clean glass, there are no rough edges. And even when you put soda in your mouth and it gets all pleasant and sparkling, it's because your taste buds are forming rough edges for the nucleation.
