The Power of Induction Stoves
There are electric stoves on the market now that kick the ass of gas stoves. Induction is more powerful than gas, and the stove heats the pan, not itself. It's expensive, but the cost will probably come down as more people adopt it. Lots of people still think that gas is the only choice of serious cooks.
