The Meat Brisket Is a Transitional Product for the North American Empire
Borden and Smith developed the meat biscuit to be a portable heat resistant food for military expeditions. It was marketed explicitly to the military for their imperial purposes as a technology of empire. The idea is that by transforming entire foods into essential versions, there is so to speak no loss in substance. And at the same time it's also part of a new way of asking questions about nourishment where the question is not how does a food nourish but which parts of food nourish and how much.
