There's a manufacturing process that creates a matte side in a reflective side. Why must there be? Well, it's the same on cheese spread when you have the foil seal. It's got a shiny side and a non-shiny side. But they can't basically be the same because they're obviously different. That's how it happens. Sam could wrap her salmon either with the shiny side out or the shiny side in - but she'd need something better than two salmon.
