Cogy Fermentation in Georgia

Coge needs a very particular amount of humidity in order to grow. The yeast wants it to be fairly cool, so we use sake yeast. But the tough part about being in georgia is that there are some pretty wild temperature swings. There are some really good months for both fermentations and for both cogy growth.
