What's the Best Way to Record a Meeting?

The best use I find for using the Mac these days in a meeting is to put it up on the Apple TV. And my favorite, by far, is Notability: A note-taking application that also records. It's just using the mic built in on the iPad; if you're sitting in a meeting, it'll get everybody's voices.
