Curry comes out of the indian som continent. We then bastardize it, and we are cooking curries from the sevententh century. Even before those started being imported into western europe, there were spices. There's loads of things with flavor. The food of the past is much more subtle than much of the food that we eat to day. So i think it is very dangerous to suggest that everything was bland at one time.
