At Chick-fil-A, they use their thumb to split open the connective tissue keeping the pectoralis minor muscle folded back. Once you can fan the minor muscle out, you get a piece of meat of more uniform thickness that will cook more evenly. This is done in small batches of just a few chicken breasts at a time over and over again every day at every individual Chick- Fil-A location. That is the fillet in the Chick-Fil-A spelled F-I-L-A.
