Chef Andrew Grool: I don't think we get rid of tipping because it incentivizes people. Tipping cash, right? Give, give the way to a break. The tips now go through the credit cards, the credit card companies report the tips to the IRS. With these tips, the employee pays taxes on the tips and the business pays payroll taxes on it as well.
