The Rise and Fall of the Culinary Profession

The culinary profession in America has clearly been around a long time. But as an organized profession where people go to restaurants and you're not seen as a delinquent, it's really recent. And we never saw old chefs retire well. Nobody has seen, name me one chef that is. Chefs are running backs.
