Dobe Mooji is like a truffle of Japan. You line it with kombu, because kombu always makes things taste better. And as you're steaming it, it produces a liquid and you drink the liquid. The Japanese refer to it as yo-haku - nothing filling the plate. It's almost what's not filling the plate in that way.
