My Kombu, Shiitaka Kombu

Hidaka kombu is known for being widely grown and it's the most popular type of kombu in kombu region. It has a garnish black color with cinoleaves and the edges are not ruffles. When it gets softer, the meaty texture is softness makes Hidaka Kombu cook quickly. And lastly, shiitakaKombu which is what I grew up eating. This one is harvested from Hidaka region of southern Hokkaido.
