When I first went to Japan, clearly there seemed to be a reason why things were set the way they were. And truth be told, a table setting is a bit of culture and any culture is what the people who practice it decide it's going to be. So unlike a western table again, where there's a glass of water there and you can take a sip of it, shiro or liquid is often just to wet your mouth, to also get ready to taste other things that are there.
