Women and Potatoes in the Past

Women were some of the first, i sume, experimenting with new dishes and recipes. It was probably women who were doing that experimentation. Soabsolutely women were part of this story as producers and as cooks. We should be paying attention to who are really behind major dietary change. They're often not the people who are recording what they see. But there is ever more recognition at all levels that we need to be able to feed ourselves on diversity.
