What Is Hay Box Cookery?
Hay box cookery wasn't invented in wells wa to but i that is thei e concept from the realief on the victorian period. You have a wooden box, which you fill with straw or other insulation material. And then you have a stew usually, which you bring to the boil on a hob. Then you put that stew into your hay box, put the lid on and pad it down with much more straw. Leave it for six, seven hours, very much like a slow cooker, but without any actual power. So it's a really good, low fuel way of cooking. I've done sead of pig cheeks with quince and things like that in that way,
